Add dry ingredients to food processor and process until combined.
Add butter and process until mixture looks like course ground meal.
Add sausage and cheese and process until combined.
Add heavy cream and process until mixture comes together.
Either use small cookie scoop or fingers to make 1 tablespoon (1 1/4 in) size balls and place on parchment lined baking sheet.
If baking right away, place in preheated 400 deg F oven and bake until golden brown, about 20 minutes.
To freeze and bake later, place wrapped baking sheet in freezer. When sausage bites are frozen they can be transferred to a plastic bag.
To bake, preheat oven to 400 deg F. Line baking sheet with parchment, evenly space sausage bites and place in over to bake until golden brown, about 25 minutes.
