Keto-friendly chicken in cream sauce with mushrooms and Swiss chard.
Generously season chicken with salt and pepper. Heat 2 tablespoon olive oil in heavy skillet over medium high heat until just smoking. Sear chicken until golden brown on both sides. Place chicken in oven safe pan and bake until 160 deg F.
Melt butter in now empty skillet until foaming subsides, then add mushrooms, shallots and 1/2 tsp salt. Saute until mushrooms are golden brown.
Add cream and simmer for about 10 minutes or until thickened.
When chicken breast registers 160 deg F remove from oven and let rest for 5 minutes. Meanwhile add Swiss chard to cream mixture in handfuls, stirring after each addition and cook until wilted. Season sauce to taste.
Slice chicken. Place serving of Swiss chard, mushroom and cream in bowl and top with chicken slices.
